My previous post I taught you how to make this fantastic Brioche from scratch and make a wonderful Nutella Brioche Star.
This post, I will show you how to make a Cookie Butter Brioche star following the same steps. You can view my previous post here.
The awesome thing about this delicious recipe, is that you can make it with so many different fillings. Use what you love! Such as Peanut butter, Dulce De Leche, Cheese, Jam, Cinnamon and Butter.
Cookie butter is basically the best thing on this planet, and I am always looking for different ways to eat it. This is the best cookie butter dessert recipe idea you’ll ever need!
You will Need:
*450g /1lb of Bread Flour
*some people are finding the dough too dry Start with 400g add the rest if it needs it. It’s all to do with egg sizes, butter and milk fat contents. Hope that helps.
70g / 1/3 of a cup of Sugar
2 Teaspoons of Active Dried Yeast
A pinch of Salt
30g / 1oz of melted Unsalted Butter
180ml / 3/4 of a cup of warmed Milk
2 Egg Yolks (keep the whites to glaze the bread)
1 cup of LOTUS Cookie Butter (melted in the microwave for easy spreading)
Bake at 180’C /350’F for 15 – 20 minutes

After you’ve made your dough, roll out and fill with Cookie Butter (see previous post for detailed steps). I use LOTUS BISCOFF cookie butter.
It is my favourite! LOTUS BISCOFF has a more caramel taste, where as other cookie butters have a more ginger taste. So it depends on what your preference is!

Below: Cut into 16 equal slices
Twist the slices and pinch at the ends to create your star!
Let sit for 20 min before baking. Once baked, you are ready to serve hot or at room temperature. But hot is better!
